Baked Figs and Pears with Ginger & Hazelnut Soya Ice Cream
On our way to Primark with my daughter, I saw a big punnet of figs in Tooting Market for only £3 and could not resist buying it, imagining all the different ways to use them. I loooooove figs. I wanted to do a healthy-ish dessert and found a very old recipe from https://www.bbcgoodfood.com from 2009 of Baked Figs and Pears.
For 5 servings, I used around 10 figs and a can of halves pears in light syrup. I put the fruits (halved figs and pears) in a dish, and added a mixture of 2tbsp honey, 2tbsp brown sugar, 2tsp cinnamon, juice of an orange and 2 star anise. I put it in the oven at 180 degrees for 15-20 minutes. And I added a few almond flakes 5 minutes before the end.
Separately, to make the soya ice cream more interesting (my husband is dairy intolerant so I buy soya ice cream for him), I got it out from the freezer for 5 minutes and added a few sliced crystallised ginger and chopped roasted hazelnuts, gave it a good stir and put it back in the freezer. It was delicious and worked perfectly with the roasted figs and pears. Enjoy!
