I love my savoury tarts, and try to be creative and use different sauces for the base, varying from tapenade, mustard, red or green pesto, aubergine base… and then for the topping I try to use the vegetables I have in my fridge, and often add some goat cheese or feta, whatever is available and inspiring. Tonight it’s a Pizza-style tart with anchovies & olives. I used a https://www.jusrol.co.uk shortcrust pastry and spread all over the pastry some https://www.belazu.com black tapenade. Then in a pan I pan- fried for 10 minutes 3 grated courgettes, 1 chopped aubergine, 1 sliced red onion, 2 sliced romano peppers and 2 garlic cloves. Then I added the veggies on the tapenade. In the oven for 30 minutes and 10 minutes before the end add anchovies and black olives. Enjoy!
