Cashew Nut and Ginger Chicken

What a day with the “Beast from the East” hitting Britain with freezing temperatures and snow. I even got my snow boots out. My kids are all hoping for a snow day so schools will be closed. It was nice to stay at home and cook dinner with a comforting cheeky glass of wine. I cooked a cashew chicken in a soy sauce, lots of ginger and garlic and served it with green beans and lime and coriander rice from https://www.sainsburys.co.uk.  It was all prepared and cooked in 30 minutes so there is no excuse not to cook a delish and nutritious meal! Instructions
  1. My ingredients.
  2. Chop the chicken in thin slices and roll in the cornflour. In a pan, add a splash of olive oil and fry for 4-5 minutes until the chicken is golden. Reserve the chicken aside.
  3. Fry the cashew nuts, ginger (chopped in matchsticks and sliced garlic) for 3-4 minutes. Add a bit of olive oil if necessary.
  4. Add the brown sugar, soy sauce and mirin and keep stiring for 2-3 minutes until it caramelises.
  5. Put the chicken back into the pan and stir. Simmer for 7-8 minutes until the chicken is well cooked.
  6. For the rice, just place in microwave for 2 mins. For the beans, steam them and add chopped spring onions and a splash of olive oil. Season.
