Having a Spanish au pair and a Spanish last name (the legend is that my husband’s great great grand father was Spanish and he went into exile and ended up in Liverpool in the UK! not as glamorous…), we love chorizo and smoked paprika¬†in the family. So last night we had a bit of a Spanish theme with our Chicken Stew with Chorizo, Peppers, Lentils and Kale. Chorizo adds such a lovely spicy kick to the dish combined with smoked sweet paprika. Ole!

  1. My ingredients.
  2. In a oven dish, add a splash of olive oil and fry the chicken fillets for 7-8mins until they are brownish. Scoop out and reserve.
  3. Add to the dish the sliced chorizo. Fry for 4-5 mins and scoop out. It will leave a gorgeous aromatic oil to the dish.
  4. Add the sliced peppers, chopped red onions, paprika and garlic. Fry for 8-9 mins until they start becoming tender.
  5. Add the chicken and chorizo back to the dish. Add the stock, tinned tomatoes and lentils. Cook in the oven at 160 degrees for 30 minutes. Add the kale and cook for a further 5 minutes.
