Moroccan Aubergine Bake

My cupboard is full of spices and I particularly adore my Moroccan spices coming straight from the Spices Souk in Marrakech where I go every year to see my Dad who chose to retire there – tough life of sun, golf and amazing food. Tonight I used cumin, cinnamon and coriander to prepare this lovely Moroccan Aubergine Bake. I dug it out from an old https://www.bbcgoodfood.com recipe of a 2011 issue. Enjoy!

Instructions
  1. My ingredients.
  2. In a large pan, add a splash of olive oil and fry the shallots, spring onions, carrots for 5-7 minutes until the vegetables are softened.
  3. Add the mince beef. Stir until brown, about 10 minutes.
  4. Reduce the heat and add the milk, simmer until the milk almost evaporates.
  5. Stir in the tomatoes and tomato puree.
  6. Add the dry spices and raisins. Simmer for 45 minutes.
  7. In an oven dish add half of the meat sauce.
  8. Add half of the sliced aubergines.
  9. Add the remaining meat sauce and halved tomatoes, pine nuts and parsley. Cook for 15-20 minutes.
