Roasted Butternut Squash
How do you eat your butternut squash? in a soup? roasted? hot? cold? I love to experiment with different recipes and I was inspired by an account on Instagram (bibi_esquerre) with her lovely roasted slices of butternut squash.
The way to do it is very simple: start by peeling your butternut and slice it. Lay on an oven rack with baking paper, add minced garlic and olive oil on top of each slice and roast at 180 degrees for about 40 minutes. I slightly modified my recipe to Bibi’s by adding a drizzle of pomegranate molasses on each slice 5 minutes before the end of cooking. And to serve them, I added crumbled feta and crushed pink peppercorns. It was a really lovely side dish to my salmon. You could also eat it on its own with a green salad maybe.
